I do like the ability to install features as I need them, similar to windows server. Start lean and fast. There are many features I don't' require that have files installed, services running etc.
It might be tricky how granular to get it, and I'm sure Veeam want users to try all the features, which doesn't add much for visibility if they are not installed. Also likely this would ADD to the price adding serious work on their end and testing etc.
