Ok, so I've been working with support, and we seem to have solved the issue with the server disappearing on reboot.
Running this command in the shell, then rebooting, has solved the problem. The service also shows up properly in the management console now, too.
systemctl enable veeam-platform-service-hpemorpheusvme.service --now
