I looked into it further and saw that the error was not for HV2 as a whole, but for one of the VMs on it.
I had to restart the VM so that the output of the ‘vssadmin list writers’ command would display the writers again.
I will wait for another 3/4 job runs to see if everything is OK, but apparently the problem is solved.
Nothing that restarting Hyper-V can't fix.
