We don't track such information today.
However, you should be able to get a "current state" overview of your M365 tenant using Microsoft 365 native tools. What you have in the tenant today is likely what you'd need to restore in a DR scenario.
The higher ups want some kind of guesstimate on how long a full restore would take in case the M365 Cloud blows up.
The restore duration depends not only on the total data size, but also on the number of items and Microsoft's throttling policies, which can vary from day to day.

I suggest running a restore test of your largest mailboxes and your largest SharePoint sites, considering both the number of items and the total size.
Unfortunately, it may take a long time to complete a full restore, especially if you have multiple TB of data. This is mainly due to Microsoft's throttling policies, which prevent uploading items to Microsoft 365 at full speed over extended periods.

The only way to ensure fast restore (and backup) for a Microsoft 365 tenant is to use Microsoft 365 Backup Storage. Veeam provides this Microsoft 365 feature as part of Veeam Data Cloud for Microsoft 365.
