Everything has been restored, but it took almost 48 hours for the restored files to actually show up.
I think Charles984 is correct, it seems the Monday restore did work (I thought it failed since no Site Notes appeared after the restore), and the ones after that for previous times were the ones that said "Skipped", because as Charles984 says the data was there, I just couldn't see it, and the restore after that was just telling me that there was nothing to restore.
