I think the main point here is that you could define only 1 gateway for 2 subnets.
But in general if you have VMs with muliple NICs you can define the virutal lab network for each of the virtual switches and subnets available and enable routing within the virutal lab when needed. This way all VMs can speak with each other in the virtual lab and you can test things there.
If you are concerned about the private API subnet burning, then just use public subnets that you do not use in your oganization as Masquerade Networks. It will warn you about it, but it will work fine.
