Welcome to the forums.
Veeam B&R has variety of options to restore data previously backed up with file share backup jobs. Have you tried Entire File Share Restore?
There are some settings, which can help you:

• Preserve folder hierarchy to keep the folder hierarchy of the original file share in the new location. (step 3. Specify Destination for Data Restore

• Restore permissions and security attributes. (step 4. Specify Restore Options)
